Method
- Beat butter and sugars in a mixer until smooth and fluffy (about 2 minutes) make sure to scrape edges for even mixing
- Add eggs one at a time, mixing well after each addition
- Add vanilla and mix well
- Slowly mix in flour, baking soda, and salt
- Add 2 tbsp of water as flour is being incorporated – do not overman
- Add chocolate chips until just combined
- Chill dough covered for 1-2 hours or overnight
- Preheat oven to 350℉ and prepare cookie sheets with parchment paper
- Scoop 3 tbsp dough balls on to sheet spacing at least 3" apart
- Bake 11-13 minutes until edges are golden and centers are just set
- Let cool for 5 minutes on sheet and then transfer to wire rack
