Peanut Butter Oat Bars

Chewy peanut butter oat crumble bars with a buttery oat crust and soft peanut butter filling. This easy 9×13 dessert is perfect for parties bake sales, or after-school treats.

Ingredients
  

Oat Crumble
  • 2 cups all purpose flour
  • 2 cups old fahsioned rolled oats
  • ¾ tsp salt
  • 1 tsp baking soda
  • 1 cup melted butter
  • 1 cup brown sugar
  • 2 tsp vanilla
Peanut Butter Layer
  • cup peanut butter
  • 2 tbsp brown sugar
  • 1 tsp vanilla

Method
 

  1. Preheat oven to 350℉. Grease a 9×13 or line with parchment
  2. In a large bowl, stir together flour, oats, salt, and baking soda. Set aside
  3. In a sauce pan, melt butter. Let cool for a few minutes
  4. Add brown sugar + vanilla to melted butter and mix
  5. Stir in flour mixture to butter and brown sugar and mix until crumbly
  6. Set aside 2 cups of crumble and press the remaining mixture into the pan
  7. Bake crust for 10 minutes
  8. White crust bakes, slowly melt peanut butter and brown sugar. Remove from heat and add vanilla
  9. Spread mixture over warm crust
  10. Sprinkle remaining oat mixture evenly over peanut butter
  11. Bake for 18-22 more minutes until lightly golden
  12. Cool before slicing for cleaner bars, or serve slightly warm for a melty peanut butter center
