- In a small sauce pan over medium heat, stirring often, brown the butter until golden brown and nutty smelling
- Pour into a separate medium size bowl and let cool for 15-20 minutes
- Once cooled, whisk in sugars, egg & egg yolk, and vanilla
- Add flour, baking soda, salt and cinnamon (don't over mix)
- Fold in oatmeal and chocolate chips
- Scoop into 3 tbsp balls (do not flatten) and let chill for at least 1 hour
- Preheat oven to 350℉
- Bake 12-15 minutes until edges are golden and centers still look slightly underdone
- Let the cookies cool on the pan for 5-10 minutes before moving to a wire rack
