Easy Strawberry Crumble Bars (Sheet Pan)

Servings: 30 bars

Ingredients
  

Base
  • 12-14 tbsp butter (melted)
  • 3 cups flour
  • ¾ cup sugar
  • ¾ tsp salt
Filling
  • 6 cups frozen strawberries (slightly chopped)
  • 1 cup sugar
  • 4 tbsp corn starch
  • 2 tbsp lemon juice
  • 1 tsp vanilla
  • pinch salt
Crumble Topping
  • cups flour
  • 1 cup oats
  • 1 cup brown sugar
  • 1/2 tsp salt
  • 1 cup butter (melted)

Method
 

  1. Preheat oven to 375℉ and line a half sheet pan (18×13) with parchment paper
Base
  1. Melt butter on the stove in a large sauce pan
  2. Add flour, sugar, and salt (don't over mix)
  3. Press base into into lined sheet pan, bake 10-12 minutes
Filling
  1. Mix filling ingredients in a large bowl and spread over topping (do not press)
Crumble
  1. Combine melted butter, flour, oats, brown sugar, and salt (should be crumbly)
  2. Sprinkle evenly over strawberries
  3. Bake 35-45 minutes until center is bubbling and top is golden
  4. Cool at least 20-30 minutes before serving
    -Can add whipped cream or ice cream if desired

Notes

These strawberry crumble bars bake up soft and jammy – more like a fruit crumble than a firm bar – so grab a fork and dig in. Add whipped cream or ice cream for an extra indulgent treat!
For firmer, handheld bars, chill before slicing.
