Method
- Preheat oven to 350 F. Line cookie sheets with parchment
- In a mixer, beat together peanut butter and butter until smooth
- Add brown sugar and granulated sugar and mix until combined
- Add eggs one at a time, mixing in-between followed by egg yolk and vanilla
- Stir in oats, flour, baking soda, and salt until just combined
- Fold in chocolate chips and M&M's
- Scoop ~3TBS for each cookie and place on cookie sheets leaving space for some spreading
- Bake for 10-14 minutes until edges are slightly golden and center is soft set
