Soft & Chewy Chocolate Chip Cookies

These soft and chewy chocolate chip cookies are packed with chocolate chips, perfectly golden around the edges, and irresistibly tender in the center. Made with simple pantry ingredients, they're the kind of classic homemade cookie recipe you'll come back to again and again.

Ingredients
  

  • 1 cup browned butter
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg
  • 1 egg yolk
  • 1 tbsp vanilla
  • cup flour
  • 1 tbsp corn starch
  • ¾ tsp baking soda
  • ½ tsp salt
  • 2 cups chocolate chips/chunks

Method
 

  1. In a medium saucepan, melt the butter over medium head. Continue cooking, stirring frequently, until the butter foams and turns golden brown (it will smell nutty, about 5-7 minutes)
  2. Transfer browned butter to a large mixing bowl and let cool for 10-15 minutes
  3. Whisk in the brown sugar and granulated sugar until smooth
  4. Add the egg, yolk, and vanilla. Whisk until glossy and well combined
  5. Evenly spread flour, cornstarch, baking soda, and salt over top of wet ingredients
  6. Mix until just combined and no dry flour remains
  7. Fold in chocolate chips/chunks. Scoop into 3 tbsp or 2 oz balls and refrigerate for at least 1 hour, preferably overnight
  8. When ready to bake, preheat oven to 375℉ and line baking sheets with parchment
  9. Bake 9-11 minutes or until edges are golden brown and centers still look slightly underbaked
  10. Let cool on baking sheet for 10 minutes then transfer to wire rack
