Easy Banana Bread Muffins

Soft, moist, and packed with real banana flavor, these bakery-style banana bread muffins are made with ripe bananas, a touch of cinnamon, and sour cream for an incredibly tender crumb. They're perfectly sweet without being overpowering and bake up with beautifully domed tops every time.

Ingredients
  

  • ½ cup softened butter
  • ½ cup packed brown sugar
  • 2 tbsp granulated sugar
  • 2 eggs (room temperature)
  • 2 tsp vanilla
  • ¼ cup sour cream
  • cups mashed ripe bananas (about 3-4 medium sized)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ tsp cinnamon
  • ¼ cup turbinado sugar (for sprinkling)

Method
 

  1. Preheat oven to 375℉ and prepare muffin tins with liners
  2. Cream butter and sugars together
  3. Add eggs one at a time mixing between each addition
  4. Mix in vanilla, sour cream + mashed bananas
  5. Stop mixer and add flour, and then sprinkle evenly on top: baking powder, salt, and cinnamon. Mix until just incorporated
  6. Fill muffin cups ¾ of the way full and use all of the batter for the 12 cups
  7. Sprinkle tops with coarse sugar if desired
  8. Bake for 18-22 minutes, until a toothpick comes out with a few moist crumbs
