Ranch Kitchen Cowboy Cookies

These cowboy cookies are the kind that disappear fast. They're loaded with chocolate chips, coconut, oats, and toasted pecans. Delicious!
Yield: 20 large cookies
Servings: 20 cookies

Ingredients
  

  • 1 cup salted butter
  • 1 cup brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 1 egg yolk
  • 2 tsp vanilla
  • cup flour
  • 1 tsp baking soda
  • 2 cups old fashioned rolled oats
  • 1 cup chocolate chips
  • ¾ cup shredded coconut (sweetened)
  • ¾ cup chopped pecans (toasted)

Method
 

  1. Preheat oven to 350F and add parchment to baking sheets
  2. In one bowl, beat butter + sugars until smooth
  3. Add eggs + extra yolk + vanilla and mix well
  4. Stir in baking soda + salt
  5. Add flour and mix until combined
  6. Fold in oats, chocolate chips, coconut and toasted pecans
  7. Scoop ~3TBS per cookie onto baking sheet with parchment paper
  8. Bake 10-12 minutes until edges are set and centers are soft
