Sheet Pan Oatmeal Scotchies

These sheet pan oatmeal scotchies are thick, chewy oatmeal cookie bars packed with butterscotch chips and baked in a half sheet pan for the perfect soft texture every time.
Servings: 30 bars

Ingredients
  

  • cups salted butter (melted)
  • 2 cups packed brown sugar
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 tbsp vanilla
  • cups all-purpose flour
  • 2 tsp baking soda
  • tsp salt
  • 5 cups old fashioned oats
  • 2 bags (11 oz each) butterscotch chips

Method
 

  1. Preheat oven to 350℉ and line a sheet pan (18" x 13") with parchment
  2. In a very large bowl, whisk together melted butter and sugars until glossy
  3. Add eggs and vanilla. Whisk until smooth and fully combined
  4. In a separate bowl, mix flour, baking soda, and salt
  5. Stir the dry ingredients into the wet ingredients until almost combined
  6. Fold in oats and butterscotch chips
  7. Spread dough evenly into prepared pan
  8. Bake for 20-26 minutes (start checking at 20 minutes). Edges should be golden and center just set
  9. Cool bars completely before slicing
