Sheet Pan Fudgy Brownies

These fudge sheet pan brownies are rich, chewy, and made in just one bowl – perfect for feeding a crowd. With crackly tops, gooey centers, and melty chocolate in every bite, this easy recipe is a go-to for parties, potlucks, or busy weeknights.
Servings: 36 brownies

Ingredients
  

  • 2 cups unsalted butter
  • 2 cups granulated sugar
  • 2 cups packed brown sugar
  • 8 large eggs
  • 2 tbsp vanilla
  • 2 cups all purpose flour
  • 2 cups unsweetened cocoa powder
  • 1 tsp espresso powder (optional, but recommended)
  • 1 1/4 tsp salt
  • 1 cup chocolate chips (for batter)
  • 1/2 cup chocolate chips (for topping)

Method
 

  1. Preheat oven to 350°F. Line 18×13" sheet pan with parchment or grease well (including edges).
  2. Melt butter in a large pot. Remove from heat and add sugars. Stir until smooth.
  3. Add eggs and vanilla. Whisk until full combined.
  4. Stir in flour, cocoa powder, espresso (if using), and salt. Mix until just combined.
  5. Add flour, baking soda, and salt. Mix just until combined.
  6. Fold in chocolate chips.
  7. Spread batter evenly into prepared pan.
  8. Sprinkle chocolate chips over top.
  9. Bake for 20-25 minutes, until edges are set and center is slightly soft. Do not over bake.
  10. Let cool, then cut into squares and serve or freeze for later.

Tips for Best Brownies

  • Don’t overbake
    • Pull them out when the edges are set and the center is slightly soft. They’ll continue to set as they cool.
  • Use good cocoa powder
    • This is where most of the chocolate flavor comes from – use a high quality unsweetened cocoa powder if possible
  • Line your pan with parchment
  • Let them cool before cutting
  • Add flaky salt on top if desired
  • Start checking early
    • Every oven is different – check at 20 minutes to avoid overtaking
