Bakery-Style Blueberry Muffins

Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup butter (melted)
  • 2 eggs
  • ½ cup sour cream
  • ¼ cup milk
  • 2 tsp vanilla extract
  • ¼ tsp almond extract
  • 2 cups blueberries (fresh or frozen)
  • 1 tbsp flour (for tossing blueberries in)
  • ¼ cup coarse sugar

Method
 

  1. Preheat oven to 425℉ and line muffin tin with paper liners
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt
  3. In a medium sauce pan, melt butter. Remove from heat and let cool for 5 minutes
  4. Whisk in eggs, sour cream, milk, vanilla, and almond extract until smooth
  5. Gently mix wet ingredients into dry ingredients until just combined. Do not overmix
  6. Toss blueberries in 1 tbsp flour then fold into batter
  7. Fill 12 muffin liners evenly using all the batter. Sprinkle generously with coarse sugar
  8. Bake at 425℉ for 6 minutes, then reduce oven temperature to 350℉ without opening the oven door
  9. Continue baking for 14-17 minutes or until tops are golden and centers are set
  10. Let cool slightly before serving
